Wild Forest Honey

Wild forest honey is raw, minimally processed, and sourced from deep forest regions rich in diverse flora. It is multi-floral, deriving nectar from wildflowers and herbs, giving it a unique character. This honey is recognized by its dark amber color and earthy, malty aroma. Its flavor is complex—mildly sweet with subtle salty undertones. Unlike processed honey, it is not heavily filtered or heated, preserving natural nutrients. It is rich in antioxidants, enzymes, Vitamins B and C, and minerals like magnesium and potassium.

Cocoa

Cocoa is derived from the seeds of the cacao tree, a tropical plant native to the Americas. The seeds are fermented, roasted, and ground to develop their rich flavor. Cocoa is processed into powder, butter, or liquor, forming the base for chocolate products. It has a deep, slightly bitter taste that defines quality chocolate and beverages. The final products range from unsweetened mineral-rich powder to sweet drinks. Cocoa is valued worldwide for its flavor, aroma, and nutritional benefits.

Vanilla

Vanilla is a tropical climbing orchid valued for its aromatic cured fruit pods, known as vanilla beans. These beans contain vanillin, the natural compound responsible for vanilla’s signature fragrance and flavor. It is one of the most popular flavoring agents used worldwide. Vanilla is widely used in desserts, beverages, and perfumery. Its taste profile is sweet, creamy, and delicately floral. Natural vanilla offers unmatched depth and complexity compared to synthetic alternatives.

Coffee

Chikmagalur coffee comes from India’s first coffee-growing region, renowned for its premium quality beans. It offers rich, bold, and smooth flavors with earthy, spicy, and fruity notes. The high-altitude plantations, fertile soil, and misty climate enhance its unique character. Both Arabica (softer, fruity) and Robusta (stronger, intense) varieties are cultivated here. The beans are often medium-roasted to bring out depth and balance. This results in a full-bodied brew with a woody aroma and a lasting aftertaste, ideal for filter coffee lovers.

Green Tea

Green tea is made from the Camellia sinensis plant and is minimally processed to preserve its natural compounds. It is steamed or pan-fired rather than fermented, retaining antioxidants like polyphenols and EGCG. This processing gives green tea fresh, grassy, vegetal, or slightly nutty flavor notes. It is typically brewed for a short time to avoid bitterness and astringency. Green tea is popular worldwide for its potential health benefits and refreshing taste. It contains mild caffeine, providing gentle stimulation that varies by origin and processing.

Perilla Seeds

Perilla seeds are tiny, oval seeds obtained from the herb Perilla frutescens of the mint family. They are known for their rich, nutty flavor and crunchy texture. These seeds are exceptionally high in plant-based omega-3 fatty acids. Widely used in Asian cuisines, they are called “Thoiding” in India and “Deulkkae” in Korea. Perilla seeds are used as garnish, in chutneys, or ground into seasoning powder. They add a rich aroma and nutritional value to soups, vegetables, and even desserts.

Oyster Mushrooms

Oyster mushrooms (Pleurotus species) are distinctive, fan-shaped fungi that grow in clusters on dead wood. They are recognized by their velvety caps, which range in colors such as white, gray, pink, and yellow. The gills extend downward along a short, off-center stem, giving them a unique appearance. Oyster mushrooms have a mild, nutty flavor with subtle anise-like notes. Their firm yet succulent texture makes them ideal for cooking. They are widely used in stir-fries and various dishes, often sliced or torn for even cooking.

Cashew

Cashew is the kidney-shaped seed of a tropical evergreen tree, known for its creamy texture and buttery flavor. It grows attached to the base of a fleshy structure called the cashew apple. The edible kernel is enclosed in a hard shell that contains toxic oils. Careful processing is required to remove these harmful substances safely. Once processed, cashews are enjoyed as snacks and cooking ingredients. They are also used in confectionery, cashew butter, and plant-based cheeses.

Boiled Rice

Boiled rice is cooked in water until tender, resulting in fluffy or slightly sticky grains. It is a global staple food that provides energy and essential nutrients like manganese. Rice is available in white and brown varieties to suit different dietary needs. It forms the base for countless dishes, from simple meals to elaborate cuisines. Texture varies based on rice type, from separate and fluffy to soft and moist. Proper soaking, boiling, and resting help achieve perfect consistency and flavor.

Sona Masoori Rice

Sona Masoori is a lightweight, medium-grain, non-basmati rice variety from South India. It is known for its soft texture, mild sweetness, and subtle natural aroma. This rice is ideal for daily meals, biryani, pulao, and traditional South Indian dishes. It cooks quickly and absorbs flavors exceptionally well. Sona Masoori is easy to digest, making it suitable for all age groups. With its lower starch content, it is often considered a healthier alternative to Basmati rice.

Gandha Sala Rice

Ganda Sala (or Gandhakasala/Gandhasaale) rice is a fragrant, short-grain, aromatic rice variety from Wayanad, Kerala, known for its delicate, sandalwood-like aroma and flavor, making it perfect for biryanis, ghee rice, and festive dishes, offering a healthier, easily digestible option with a low glycemic index, popular for its unique taste and cultural significance.

Black sesame

Black sesame seeds are small, dark, tear-drop shaped seeds from the Sesamum indicum plant. They are highly valued in Asian cuisine for their rich, nutty, and slightly bittersweet flavor. Roasting enhances their aroma, taste, and crunchy texture. The natural outer hull provides additional antioxidants and dietary fiber. They are an excellent source of essential minerals, especially calcium. Black sesame seeds are widely used in both sweet and savory dishes for flavor and nutrition.
